Recently, I have started making my own fish tacos, and let me tell you they are DELICIOUS!! I don't eat them every Tuesday, but they are so good that I could substitute every Tuesday dinner with these things!! Just invite some friends over and pop some Coronas and it's just like eating at a restaurant, except healthier and cheaper!! I hope you like these as much as I do!!
Christine's Fish Tacos
Ingredients:
- Corn Tortillas
- 2 Avocados
- Guacamole Mix (trust me)
- Salsa
- Frozen Tilapia fillets (I love the Tortilla fillets from Costco)
- Cabbage
- Cheddar Cheese (optional)
For the White Sauce:
- 1/2 cup reduced fat sour cream
- 1/2 cup reduced fat mayo
- 1 lime, cut in half
- 1/2 tsp cumin
- 1/2 tsp ground coriander
- 1/2 tsp dried dill weed
- 1/2 tsp oregano
- 1/4 tsp ground chipotle chili powder
- 1 jalapeño, chopped
- 1 tbsp fresh cilantro, chopped
Directions:
Preheat the oven to 425º. While waiting for the oven to warm up, mix together all the ingredients for the white sauce in a medium bowl, then set aside in the refrigerator. Then to make the guacamole, follow the directions on the Guacamole mix packet and set aside in the refrigerator.
Place the fish fillets on a cookie sheet and place in the oven for 15 minutes.
While the fish is cooking, cut up some cabbage; however much you like. Shred yo cheese and warm up those tortillas over your stove flames. Once the fish fillets are cooked, cut them in half length wise and place in your tortilla. Now top with your desired amount of cabbage and cheese, 1 tbsp guacamole, 1 tbsp salsa, and 1/2 tbsp of white sauce on each taco and viola! You have your homemade delicious fish taco!!
Seriously its delicious and it only take about 25 minutes to make!! Make some next Tuesday, invite your friends and pop some beers!! Hopefully this can be a new tradition.
